Charquican

The Charquican is a typical Chilean dish. It is a stew made form cooking chunks of potato, green beans, separated corn grains and smaller chunks of horse meat, preferently from the legs. It can also contain smashed coca leaves and in some regions tomato is also added. Accompaining the charquican, on top, goes a mid-fried egg.

A variation of the charquican contains the marine common Chilean algae cochayuyo (Durvillaea antarctica), that is cooked in the same stew.
