Tamalito

Tamalito is a typical dish of the Amazonas Region in Peru. Its appearance is similar to the tamales from the coast, but they are drier and smaller. It scarcely reaches 7 cm.

Preparation

It is necessary to soak two kilograms of clean and dry maize. Drain and grind in a small gristmill. Once the paste was ground, it is mixed with one kilogram of lard. This is the base for the tamalito.

Take a little bit of the mix and in the middle of every portion place minced meat with peanut and black olives. Cover up with another mix portion and wrap it in leaves of achirra.

Each tamalito must be firmly tied with string or thread. When they are all prepared place them in a saucepan with a little water and boil taking care not to burn them.
